Flaming Cherries Jubilee


1 can (16 oz) dark sweet pitted cherries in juice or light syrup
2 teaspoons cornstarch
1 tablespoon fresh lemon juice
1 tablespoon water
Grated zest of 1 lemon

1/4 cup brandy, per serving


1. Drain the liquid from the cherries into a small saucepan. Add the lemon juice and heat over low heat until hot.
2. Stir the cornstarch and water together in small bowl. Stir into hot cherry juice and cook, stirring constantly, until thickened.
3. Add the cherries and lemon zest. Cook, siring frequently, until cherries and heated through, 2 to 3 minutes. Server Hot.

1. Scoop the ice cream into a sundae dish.
2. Heat one cup of the hot burgundy cherries
3. Warm brandy in another small saucepan. Ignite brandy and pour over he cherries. When flames die down, stir in the sauce and pour over the ice cream.
