Cranberry Banana Bread


1 cup granulated sugar
1/2 cup butter or margarine, softened
1 cup mashed banana
1/4 cup milk
2 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup chopped walnuts
1 1/2 cups coarsely chopped Fresh or Frozen Cranberries


A) Preheat oven to 350?ã?°F
B) Grease an 8 1/2 x 4 1/2 x 2 1/2 -inch loaf pan. 1) Mix sugar and butter together in a medium mixing bowl until completely blended.
2) Add banana, milk and eggs, mixing well.
3) Add dry ingredients, mixing just until moist.
4) Stir in nuts and cranberries.
5) Spread batter evenly in a loaf pan.
6) Bake for 1 hour and 10 minutes or until a toothpick inserted into the center of the bread comes out clean. Remove from pan and cool.


Yeild: Makes 1 loaf (12 servings)
