Frito Pie Bowl

Ingredients

2/3 bags of traditional Fritos
3 cans hormel chili (1 can no beans!)
1 tablespoon butter
2 cloves minced garlic
2 tablespoons tomato paste
2 tsp smoked paprika
1 tablespoons fresh cracked pepper
8oz good sharp aged cheddar cheese (grate it freshly)
1 bunch of cilantro (roughly chopped)
Sour Cream
Sliced mild Pickled jalapeño

Method

In a medium saucepan on medium/low heat, add butter and the garlic (don’t let it burn)
Then immediately add the cans of chili
Keep heat on medium, and stir in the tomato paste and smoked paprika
Add fresh cracked pepper and stir for a few more minutes, turn off heat. (chili should be very hot all the way through, if not, turn heat up to medium high.)

In each person’s large soup bowl add a nice handful of Fritos
Ladle a nice amount of the chili over the Fritos.
Sprinkle fresh grated cheddar over chili (let melt)
Serve with a dollop of sour cream
Sprinkle on cilantro, and jalapeño if desired

Use a huge spoon and dig in!
