Domi's Special Egg Pan


10 eggs
1 tablespoon butter
1 medium onion, chopped
1-2 medium tomato, cubed
4 casing sausages, cut into 1/4" slices
2/3 cups ham, minced/cubed
Salt, pepper, granulated sugar
1/2 cups corn


1) Saute onions in butter until transparent over medium-high heat
2) Add sausage and ham
3) Add tomato (with the juice from the tomato)
4) Salt and pepper to taste
5) Add a pinch of sugar until the liquid is slightly sweet
6) Boil over medium heat until liquid reduces slightly
7) Add eggs on top and let sit for 1-2 minutes (let egg whites slightly set)
8) Scrabble eggs: turn the mix every now and then
9) Add milk if dry
10) Serve in saute pan, with buttered bread slices


Yield: 2-4 servings
