Feta Stuffed Chicken Breast


6 boneless chicken breasts
1/2 cup feta cheese, crumbled
(can also use feta cheese with basil & tomato)
1/2 cup fresh parsley, chopped
1 tablespoon olive oil
1 teaspoon dried oregano
1 - 14 ounce can diced tomatoes
1/2 cup sliced black olives
1 tablespoon cornstarch


Cut a 2 - 3 inch slit in each chicken breast. Combine feta cheese, parsley, olive oil and oregano and mix well. Stuff each chicken breast with an equal portion of cheese mixture. Place stuffed chicken breasts in a baking dish. Combine tomatoes, olives and cornstarch and mix. Pour over chicken and bake for 45 minutes in a 350 degree F. oven.


Good with mashed potatoes and green beens or asparagus with lemon.
